Maybe you’ve had potato and leek soup in the past. After all, it’s a classic recipe that you simply can’t go wrong with. But our version has improved the traditional recipe a few notches and turned up the aroma dial.

How to Make Spicy Leek and White Bean Stew
This hearty stew is a breeze, not to mention it freezes well and makes amazing leftovers. Just add garlic to a stock pot until fragrant, followed by leeks, dried thyme, red pepper, salt, and black pepper. After that, cook the leeks until tender, add the rest of the ingredients and cook!
We recommend cooking the spicy leek and white bean stew for 30-45 minutes, until the potatoes are soft and tender. Garnish your masterpiece with fresh thyme and voila! You are ready to dive in.

- 1 tablespoon olive oil
- 3 Garlic cloves chopped
- 2 lb Yukon gold potatoes cut into 1/2 inch cubes
- 3 leek medium sized, cleaned and sliced (both white and green parts of leeks and used)
- 2 teaspoon dried thyme not ground
- Pinch of crushed red pepper
- 1 teaspoon kosher salt
- 1/2 teaspoon ground black pepper
- 3 cups White beans cooked, this can be cannellini, great northern, butter, or any white bean
- 5 cups Vegetable broth
- 1 tablespoon fresh thyme leaves optional to garnish
Heat the olive oil in a stock pot over medium heat. Once it’s hot, add the garlic and cook until it’s fragrant. Stir in the potatoes and cook for about 5 to 10 minutes or until the potatoes are too brown.
Add the leek, dry thyme, red pepper salt, and black pepper. Cook until the leek is soft. Stir in the remaining ingredients (except fresh thyme) and bring to the boil.
Bring to a boil and cook for 30 to 45 minutes or until the potatoes are tender. If a thicker stew is desired, gently mash the mixture to thicken it. Sprinkle with fresh thyme before serving.
