How to make slow cooker breakfast casserole
This breakfast casserole only takes 15 minutes to prepare, so you can throw it up with very little effort. After preparing, sit back and let the slow cooker take over. How easy is it
First, grease your slow cooker with a little olive oil. You can rub the oil on all sides or use an oil spray. Then put your potatoes, onions, jalapeño, and salsa in the slow cooker. Finally, whisk the eggs lightly in a small bowl before mixing in the mozzarella, salt and pepper. Pour this egg mixture into the slow cooker, making sure to cover all of the vegetables. Cook the casserole on low heat for four hours, until the potatoes are tender and soft.

- 1 teaspoon olive oil
- 1 1/2 cups Potatoes thinly cut
- 1/2 Cup Salsa without added sugar
- 1/4 Cup onion diced
- 1 Jalapeno cored and diced
- 5 Eggs large
- 1/2 Cup Mozzarella Skim over part, rubbed
- 1/4 teaspoon kosher or sea salt
- 1/8 teaspoon black pepper
Rub the slow cooker with olive oil on all sides. You can also use an oil spray. Spread the potatoes, onions, jalapeno and salsa in the slow cooker.
In a separate bowl, whisk the eggs lightly. Add the mozzarella, salt and pepper. Pour this mixture into the slow cooker, making sure to cover the potatoes.
Set the slow cooker on low for 4 hours or until the potatoes are tender and the eggs are firm.
A smaller casserole dish was placed in the slow cooker for this portion size.
