Easy grilled shrimp tacos in 15 minutes!
The very first thing I like to do with this recipe is preparing the toppings. That way I can serve the tacos while the shrimp and tortillas are still warm! Chop the lettuce, dice the tomatoes and the red onion, cut a jalapeno into slices and set aside. If you want to prepare in time, keep them in the fridge! This recipe also calls for sliced avocado, but it’s best to do this right before serving to prevent the slices from oxidizing and turning an unsightly brown color.
Before preparing the shrimp, preheat the grill to medium heat. If you haven’t bought peeled and deveined shrimp, do so now. Remember to dispose of the tails as well. When you’re done, put the shrimp, olive oil, chili powder, garlic powder, cumin, salt, and pepper in a mixing bowl and toss until the shrimp are evenly covered.
Put some oil on the grill grate to prevent the shrimp from sticking. Then place the shrimp on the grill and cook for about three minutes or until opaque. Take them off the grill and set them aside.
In the meantime, heat a few corn tortillas and the black beans in the microwave or on the stove. Once it’s warm you can start plating! Layer some shrimp, black beans, lettuce, tomato, onion, jalapeno, and freshly cut avocado on top of each tortilla. Drizzle each taco with a little lime juice and top with fresh coriander!
Would you like to grill your shrimp instead?
No access to a grill? No problem! The grill in your oven will work fine. All you have to do is place the oven rack about five inches below the heating unit and preheat your grill. Then place your seasoned shrimp on a baking sheet in a single layer and slide them into the oven. You only need to grill the shrimp for about two minutes, so keep an eye on them as they will cook very quickly!
