We love cookies. Unlike traditional biscuits, drop cookies do not require tedious rolling and folding of the dough. You just scoop up batter and spoon it onto the pan, just like its name.

Our recipe only calls for a handful of simple ingredients. This includes butter, flour, baking powder, salt, sugar and 1% milk. But if you’re looking for something dairy-free, you’ve come to the right place! You can make this recipe vegan easily by dipping vegan butter for regular butter and soy milk or coconut milk for 1% milk.

Use whole wheat flour instead of your usual all-purpose white for extra nutrition. White flour loses food and fiber during processing. Alternatively, whole wheat flour contains higher amounts of fiber, iron, calcium and protein. Best of all, both of them taste great when used in pastry recipes!

While we encourage an occasional indulgence, we don’t want something so fat and high in calories to interfere with your health goals. Our drop biscuit recipe enables you to enjoy the classic pastries without breaking your calorie bank! These carbohydrate-friendly cookies consume 180 calories per serving – almost half the amount you’d find in typical recipes!

Making these cookies is a breeze. In just a few simple steps, you’ll be ready to eat in minutes! Simply combine all the ingredients (except milk) in a food processor and pulse until you have a fine, crumbly consistency. Then pour this mixture into a bowl and gradually add the milk until you have a sticky batter.

Next up is the fun part! Drop balls of dough onto a prepared baking sheet and place in the oven at 450 F for 10-15 minutes. Let the oven work its delicious magic. When the cookies look golden brown, take them out and let them cool!

  • 1/2 Cup cold butter Cut into cubes, vegan stick butter can be replaced
  • 2 cups All-purpose white flour or whole wheat flour
  • 3 teaspoon baking powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon sugar
  • 3/4 Cup 1% milk For a vegan variant, use soy milk
  • Preheat the oven to 450 degrees. Line a baking sheet with parchment paper and set aside.

  • Mix all ingredients except milk in a food processor. Pulsate until a fine crumb forms. The mixture should look like small pebbles or sand. Keep this mixture cold until you can move on to the next step. This can be done in advance and kept in the fridge or freezer until you are ready to add the milk and bake!

  • Pour the flour and butter mixture into a mixing bowl and gradually add the milk until a sticky batter forms. Use the spoon to drop the batter (a little less than 1/4 cup of batter per measuring spoon) onto the prepared baking sheet. Bake for 10-15 minutes or until golden brown.

  • Serve hot or cold with your favorite toppings such as butter, honey, jam or nut butter!

  • Pro tip: To spice up your cookies, add in your favorite herbs and spices, or even a little bit of cheese! For a shortcake option, increase the sugar to 2 tablespoons and add a dash of vanilla extra and serve with fresh berries.
