- 4th lb Pork loin Middle cut, slim
- 1 yellow onion quartered
- 3 Garlic cloves crushed
- 2 Lemons
In a small bowl, combine the chilli potatoes, paprika, cumin, oregano, salt, black pepper and red pepper. Mix well. Place the pork loin in a large bowl and coat each side with the seasoning mixture. Cover and let rest for an hour or overnight for the best taste.
After the pork is rested, place the seasoned meat in the slow cooker. Place the garlic and onion around the pork. Halve the limes and squeeze the juice over the meat. Also place the juiced lime halves in the slow cooker. Cook on high for 4 hours or low for 8 hours, until the pork is tender.
After the pork is cooked, remove the lime peel from the slow cooker, drain to about half a cup of liquid from the slow cooker, and mince the pork. Serve.
