The secret of moisture absorption lies in the slow cooker. If you use the Set ‘n Forget option with a meat thermometer, program the temperature to 165 degrees. It is automatically switched to warm when the desired interior temperature is reached.

Despite its impressive taste, this chicken recipe is a breeze. In fact, your slow cooker does most of the work. First, combine all of your herbs and spices in a mixing bowl and beat in the extra virgin olive oil. Coat your chicken with the delicious herb mixture and place it in the slow cooker.

Next, whisk together the Dijon mustard, honey, garlic, pomegranate juice and balsamic vinegar and pour the spicy mixture over the chicken. Cook on low for 4-6 hours and voila! You’ve got yourself delicious melted chicken in your mouth and tasty options for several days!

  • Make chicken tacos and top them with Salsa, guacamole, Coriander, chopped onions and pico de gallo. Yum!
  • Serve with roasted vegetables and a healthy grain like quinoa or brown rice!
  • Chop up the chicken and serve in a delicious sandwich clean eating mayonnaise, Tomatoes and mozzarella!
  • 1 1/2 to 2 lb Boneless and skinless chicken breasts about 4 (6 to 8 ounce) breasts
  • 1/2 teaspoon black pepper
  • kosher or sea salt taste
  • 1 teaspoon coriander
  • 1 teaspoon Chili powder
  • 1/4 teaspoon Cayenne pepper
  • 2 teaspoon dried oregano
  • 2 tablespoon Extra virgin olive oil
  • 1 tablespoon Dijon mustard
  • 2 tablespoon honey
  • 2 Garlic cloves chopped
  • 1 1/2 cups Pomegranate juice without added sugar
  • 1 tablespoon white balsamic vinegar
  • Mix all herbs and spices in a small mixing bowl.

  • In a large mixing bowl, whisk the herbs, spices and extra virgin olive oil together. Rinse the chicken, pat dry with a paper towel. Brush the chicken with the herb-oil mixture and place in the slow cooker. Note: This method of rubbing the chicken with olive oil before adding it to the slow cooker will help lock in the moisture.

  • In a medium-sized mixing bowl, whisk together the Dijon mustard, honey, chopped garlic, pomegranate juice and balsamic vinegar … pour over the chicken.

  • Set the slow cooker on low and cook on low for 4-6 hours. After the chicken is done, take it out of the slow cooker, place on a serving plate and drizzle with liquid. This extra moist chicken goes well with a small side of pasta. If you are using the Set ‘n Forget Slow Cooker, program the temperature to 165 degrees or follow the manufacturer’s instructions.
