We smell a new family favorite!
There is nothing like a good BBQ chicken that is tender and full of smoky flavor. This recipe is no exception. One of the things I always want people to take away my recipes is that they are just a guide. Once you have the basic concepts in hand, let your creativity guide you. With this Cherry Chipotle BBQ Chicken, as with many of my recipes, you can change things up to make the dish your own!
First, check the sweet flavors
I know what you’re thinking. I use canned cherry AND cherry cake filling? Trust me. If you are concerned about sugar levels, you can limit it by using a light cherry pie filling with no added sugar. Next, limit the added sugar by choosing sugar-free or sugar-free canned cherries. Better still, you can buy frozen sweet or pie cherries and eliminate the pie filling altogether!
Finally, choose a BBQ sauce with no added sugar. These choices will help you create the perfect amount of sweetness for your Cherry Chipotle BBQ Chicken!
Second, rule or raise the heat
The main source of heat for this Cherry Chipotle BBQ Chicken is smoky chipotle peppers in Adobo sauce. They are ideal for controlling heat for several reasons. To start with, the peppers themselves contain plenty of spices. In the meantime, the smoky Adobo sauce packs even more punch. To control the heat level, you should first decide how much heat you want, a little or a lot?
The first thing you can do to rule in the fire is to rinse the peppers with cold water and leave out the adobo sauce altogether. Not only do you get a touch of heat, but you don’t sweat too much either. If you’re feeling adventurous and want to deepen the seasoning a bit further, scoop in extra adobo sauce and a few extra peppers afterward. If you really want to heat things up, use some flavorful BBQ sauce. Don’t say I didn’t warn you!
The perfect complementary side dish options
Shredded chicken recipes are some of my favorite recipes. They taste so great, but are also incredibly versatile. Use the shredded chicken to create a great main course by serving it in a bun with a side dish of vegetables and rice, or over potatoes. You can use it in tacos, wraps, sandwiches, quesadillas, or even on salads too! The choice is yours, so don’t be afraid to use your imagination!
We have some side dish recommendations if you choose to go this route. Consider one of these delicious and nutritious options:
For the sauce:
- 1 Cup sugar-free cherry preserves
- 1/2 Cup light cherry pie filling
- 2 cups no sugar added BBQ sauce
- 1 tablespoon Chipotles with Adobo sauce, chopped
- 1/2 teaspoon Ground carnations
- 2 tablespoon Red wine vinegar
For the chicken:
- 3 lb Boneless and skinless chicken breast halves
- 1 teaspoon Salt-
- 1/4 teaspoon ground black pepper
- 1/2 Cup low sodium chicken broth
Cooking the Chicken:
Put all ingredients in an instant pot. Pour the sauce over it.
Set the stove to manual, high pressure. Cap and make sure the pressure vent is sealed.
Cook for 20 minutes, then let it subside naturally for 15 minutes. Release the remaining pressure using the quick release method.
Chop the chicken with a fork and serve.
