- 12th Ounces gluten-free pasta
- 1 tablespoon olive oil
- 1 lb Chicken fillet
- 1/2 teaspoon kosher salt
- 1/4 teaspoon ground black pepper
- 1/2 Red pepper thinly cut
- 1/2 yellow pepper thinly cut
- 1/2 green paprika thinly cut
- 1 tablespoon unsalted butter
- 3 Garlic cloves chopped
- 1 Shallot peeled and thinly sliced
- 1/2 teaspoon crushed red pepper
- 1/4 Cup low sodium chicken broth
- 3 tablespoon Lemon juice Freshly squeezed
- 1 tablespoon Lemon peel
- fresh parsley chopped, for garnish
- Parmesan cheese grated, for garnish (optional)
Cook the pasta according to the instructions in the package. Drain and set aside.
In the meantime, heat the olive oil in a large pan over medium-high heat. Season the chicken with salt and pepper and add the fillets to the pan. Flip once until golden brown on both sides, about 6 minutes. The chicken is not cooked through. Put the chicken on a plate.
In the same pan, add the red pepper, yellow pepper and green pepper and cook for about 5 minutes until tender.
Put butter, garlic and shallots in the pan and cook for about 2 minutes until they are fragrant.
Return the chicken fillets to the pan along with the crushed red pepper, chicken stock, lemon juice, and lemon zest. Simmer for about 5 minutes, until the chicken is cooked through and the sauce has thickened slightly.
Add the drained pasta to the pan and toss to coat. Fill the pasta into individual bowls and top with freshly chopped parsley and grated Parmesan (if used).
