Preparing your meal at home, whether it’s a meal, snack, or dessert, is an excellent way to keep your diet in check. When ordering groceries from a restaurant or buying a prepackaged treat from the store, there is no way of knowing what types of ingredients have been added. On the contrary, homemade products allow you to know exactly what you are eating, what makes it much easier to limit calorie intake and eat cleanly!
These chocolate truffles are not strictly a “diet” food, but you can feel good when they’re made from natural ingredients. The truffles themselves are made from naturally sweet ingredients such as raspberries, coconut, dates and vanilla extract. The salt pulls a little more sweetness out of the cocoa powder, while the walnuts add a wonderful layer of texture.
Each of these dairy-free, gluten-free and vegan-friendly chocolate raspberry truffles contains 144 calories. If you can manage to eat just one, this is the perfect way to incorporate that into your diet! That said, if you want to eat more than one, we certainly won’t judge. An added perk of DIY Valentine’s Day candy
An added benefit of making your own Valentine’s Day truffles at home is that the effort you put in shows how much you care! It’s easy to buy a box of chocolates, but make it yourself? This is love The best part? These delicious chocolate raspberry truffles only need 10 minutes to prepare! Of course, you’ll have to let them cool for 3 hours, but it’s worth the wait.
How to Make the Perfect Chocolate Raspberry Truffle
Take your food processor and add the raspberries, walnuts, coconut, dates, cocoa powder, vanilla extract, and salt to the bowl. Mix the mixture until it’s nice and smooth. Next, line a baking sheet with parchment paper or foil and use your hands to shape the mixture into 1-inch balls. You should be able to roll 12 truffles from this recipe.
Once all of the balls are formed, chill in the refrigerator for 15 to 30 minutes. While the truffles are cooling, do your outer coating by adding the coconut and freeze-dried raspberries to the food processor. Pulse a few times until the coconut turns a pretty pink color! Take the cooled truffles out of the refrigerator and roll each ball in the outer coating until it is evenly covered. Put them back on the tray and in the refrigerator for an additional 2 hours and 30 minutes or until they are firm. Enjoy!
- 1 Cup Raspberries frozen
- 1 Cup Walnuts raw, unsalted
- 1/2 Cup coconut dried out
- 6th Medjool dates gutted
- 3 tablespoon Cocoa powder
- 1 teaspoon Vanilla extract
- 1/4 teaspoon Salt-
- 1/2 Cup coconut dried
- 3 tablespoon freeze-dried raspberries
Combine the truffle ingredients in a food processor and blend until smooth.
Shape into 1 “balls and place on a lined baking sheet.
Chill in the refrigerator for 15-30 minutes.
In the meantime, mix the ingredients for the outer coating in a food processor and pulse 2-3 times or until the coconut turns pink.
Take the truffles out of the refrigerator and roll each one in the outer coating to cover each ball.
Place in the refrigerator and let cool for about 3 hours or until it has set.
Store in a closed container in the refrigerator for up to 4 days.
