How to Make This Cast Iron Banana Bread Recipe
This recipe is so easy to put together that it takes about 10 minutes to mix all the ingredients together. Then it’s so easy to slide the pan in the oven and let it do that!
Mix butter and sugar until fluffy, then add eggs one at a time.

Add bananas and vanilla. Mix the flour, soda and salt.

Alternately add dry mixture and buttermilk to the cream mixture.
Fold in the chocolate chips.

Melt the butter in a cast iron pan and add the bread dough.

Cook for 40 minutes at 350 degrees.

FOR THE CARAMEL SAUCE: Mix the butter, sugar and cream in a saucepan and bring to the boil for a minute. Remove from heat and drizzle over baked bread.

Variations / options / add-ins
- PECAN NUTS: If you’re not a fan of pecans, you can omit them or replace them with a different nut like crushed walnuts or almonds.
- CHOCOLATE CHIPS: You can use any flavor of chocolate chips. White chocolate, dark chocolate, butterscotch, or milk chocolate chips would be delicious.
- ICE: To make this dish a dessert, serve warm with vanilla ice cream and then pour the caramel drizzle over it! It’s so delicious that way.
Tips
- When baking, place a large round pizza pan or baking sheet under your pan. That way it will catch the overflow if your butter boils over.
- Pay close attention to the pot when preparing the caramel sauce. It can burn very quickly if left unattended.
How to serve skillet banana bread
This banana bread can be served in a number of different ways. For one, it can be served as it is for a delicious breakfast.
However, if you want to spice it up and serve it up as a dessert, you can add my homemade caramel sauce and top it with this simple no churn vanilla ice cream. It’s so tasty this way!
How to store leftover pan of banana bread
Store leftover bread in a Ziploc bag or container with a sealed cover on the countertop for up to 4 days at room temperature. You don’t want to keep leftovers in the refrigerator. This can cause the bread to dry out prematurely.
Chilled banana bread can also be frozen for 2-3 months. Wrap it tightly in plastic and put it in a freezer bag before putting it in the freezer.
