- 2 Avocados peeled and sliced
- 12th Cherry tomatoes halved
- 2 Cucumbers medium, diced
- 1/2 Red onion thinly cut
- 1 tomato large, sliced
- 1/4 Cup Extra virgin olive oil
- 2 tablespoon Lemon juice Freshly squeezed
Combine all the vegetables in a serving bowl. In a small bowl, whisk the extra virgin olive oil and lemon juice, drizzle over the salad ingredients and mix gently. Season to taste with salt and pepper.
