- cauliflower – 1 medium head, chopped into small florets

- Pine nuts or almond slices – Roast the nuts until golden brown on a dry pan for a more intense nutty taste and a crispier texture.

Creamy honey and lemon dressing
This dressing doesn’t get any easier and we love using honey to sweeten and balance the flavor of the dressing.
- mayonnaise – Use real mayo for the best taste
- Lemon juice – Be sure to use freshly squeezed lemon juice (not from concentrate).
- honey – We use 2 tablespoons, but you can add it to your taste. Liquid honey is easier to incorporate into the dressing.
Once you have all the ingredients ready, just add the dressing to taste and toss to combine, then enjoy. It is so easy!
Frequently asked questions
Nuts make for good crispness, but you can easily replace sunflower seeds or pumpkin seeds with them and roast them for a deeper flavor.
Craisins or dried cranberries can easily be replaced with raisins. You can also use fresh grapes if you prefer, but double the amount.
We do not recommend using frozen broccoli or frozen cauliflower for this salad, as the crunch is absent and will not keep well after the broccoli has thawed. Using frozen water will likely water down the dressing in the salad as well.

Aside from the amazing taste, what I love most about this salad is the “make-ahead” factor. This salad is just as good (if not better) after being melted with the dressing in the refrigerator overnight.

medium broccoli head
medium head of cauliflower
sliced almonds or pine nuts
Roasted golden brown on a dry pan
fresh lemon juice
of 1 small lemon
Peel the broccoli stem and cut off the dry base. Cut broccoli into small florets and, if using, dice the stem.
Remove and discard the cauliflower core and dice the rest.
Toast half a cup of almonds on a dry pan over medium / high heat, stirring frequently until fragrant and golden brown, then add them to the salad bowl along with 3/4 cup craisins.
In a small bowl, whisk together 1/2 cup of mayonnaise, 2 tablespoons of honey and 2 tablespoons of lemon juice. Add dressing to the salad and toss well to combine.
